Filo Canapés

Just a few ideas to use up all those bits of leftover filo pastry

You can make them bite-size and you get a lot from a small amount of pastry. I have a 24 mini bun tin which gives a perfect size for canapés. They can be sweet or savoury and can be frozen before cooking. I have a container in which I keep some empty baked shells which can be filled with cream cheese and smoked salmon or diced chicken in a curry mayonnaise. Even though these are small three or so can be served as a starter with a salad.

Ingredients

  • Filo pastry
  • olive oil
  • egg
  • single cream

Filling choices - Savoury

  • brie, grated, with chopped ham add egg mix
  • stilton, crumbled add egg mix
  • feta cheese, crumbled, with chopped olives add egg mix
  • cheddar cheese, grated, with herbs add egg mix
  • cooked bacon with parmesan add egg mix
  • sauteed mushroom with finely chopped spinach add egg mix
  • cream cheese and smoked salmon with herbs
  • prawn in a herb mayonnaise

Filling choices - Sweet

  • raisins and cinnamon add egg mix
  • homemade lemon curd
  • stewed apple and
