Cornish yarg & button mushroom omelette

Ingredients

eggs
whisked with 4 tbsp milk

olive oil

cooked new potatoes

chestnut mushrooms

chopped fresh herbs
salt and coarse ground black pepper

Cornish yarg cheese
or similar hard cheese, grated
Instructions
Heat the olive oil in a large frying pan
Add the new potatoes and sauté until starting to brown
Add the mushrooms and fry for another 5 minutes
Gently add the eggs to the pan stirring as you go, pulling the mix away from the middle of the pan to help cook evenly
Cook for about 8 minutes on a medium heat, checking the edges to see if it is golden brown
Have a grill heated ready
Top the omelette with the grated yarg and grill until melted and golden
