Cornish yarg cheese has a delicious flavour and texture which lends itself to complimenting the egg, mushroom and potato combination in this recipe.
This is a very quick snack to make if you have some cold potatoes and some mushrooms in the fridge.Add a handful of fresh herbs for more flavour.
Cornish yarg & button mushroom omelette
Servings: 2
Ingredients
- 4 eggs whisked with 4 tbsp milk
- 2 tbsp olive oil
- 8-10 cooked new potatoes sliced
- 125 g chestnut mushrooms
- 1 tbsp chopped fresh herbs
- salt and coarse ground black pepper
- 100 g Cornish yarg cheese or similar hard cheese, grated
Instructions
- Heat the olive oil in a large frying pan
- Add the new potatoes and sauté until starting to brown
- Add the mushrooms and fry for another 5 minutes
- Gently add the eggs to the pan stirring as you go, pulling the mix away from the middle of the pan to help cook evenly
- Cook for about 8 minutes on a medium heat, checking the edges to see if it is golden brown
- Have a grill heated ready
- Top the omelette with the grated yarg and grill until melted and golden
