Flapjack

I know, there are hundreds of Flapjack recipes so why another one? Well I have found recently that any time I make any flapjack it never seems to hold together and I end up using it for a crumble topping. So, after some experimenting and a few crumbles this is my successful recipe that I want to share with you, and a few tips to aid success.

I have tried making it- unsuccessfully- with wholegrain oats and yes it did make a delicious crumble topping or as a lovely dessert layered with fresh berries and Greek yogurt. So back to the drawing board and use good old-fashioned rolled oats- you know those small ones we always used to make porridge with before we started using bigger ones. Apparently there is no nutritional difference only that the rolled oats don’t fill you up for as long as the wholegrain ones.

Although it is always seen as a quick treat to make, its worth taking a little extra time to guarantee that perfect bake.

Notes

Variations:
Replace the golden syrup with maple syrup for a richer flavour.
Add a handful of large raisins to the mix before placing in the tin.
Replace 25g oats with 25g sesame seeds or sunflower seeds.
Tips:
Really take the time to press the mixture down well into the tin.
Leaving the flapjack to cool aids a better result.
