Honey Walnut Shorties

A great cookie to make with the children.

These are very moreish and to stop you eating them all in one sitting they freeze very well, either uncooked or cooked. 

The walnuts can be substituted with pecan nuts.

Honey Walnut Shorties

Ingredients

  • 175 g butter
  • 175 g caster sugar
  • 1 medium egg beaten
  • 300 g clear honey or 150g honey and 150g golden syrup
  • 100 g chopped walnuts
  • 250 g plain flour
  • 10 g baking powder

Instructions

  • Cream the butter and sugar until light and fluffy.
  • Add the beaten egg, honey or syrup and honey, and the chopped walnuts.
  • Sieve together the flour and baking powder and fold into the mixture.
  • Leave to firm up for about 15 minutes.
  • Drop teaspoonfuls of the mixture on to greased or lined baking sheets, rounding them up slightly.
  • Bake at Gas Mark 4 / 180C for approximately 15 minutes. Remove onto a cooling rack when slightly cooled and firmer.

Notes

Tip:
If the honey has crystallised, place the jar in a bowl of near boiling water and leave for about 15 minutes. This also helps to clean out the jar fully.
Don’t be tempted to use margarine……… they really aren't the same!
